We generally just ignore them, as they are in violation of Apple's license. That said, from talking to users, it seems that while the MonoTouch eval works fine on the hackintoshes, the full version (which includes the full cross-compiler tool chain, copy protection mechanisms, etc) will not work on most hackintoshes for various reasons.
